For the USDA to consider meat organic, it must come from livestock that was raised without added hormones or antibiotics (vaccines are OK) on certified organic land and, with certain exceptions, given year-round access to the outdoors. To further confuse things, terms like “natural,” “grass-fed,” and “pasture-raised” are sometimes used interchangeably with “organic,” but these each have their own meanings that, again, can shift depending on who’s doing the talking. When it comes to organic food, it’s important to understand that what one person means by “organic” might not be what another person means.
